Safer Cosmetics for Kids

According to a study by the Environmental Working Group, children are exposed to an average of 61 different chemical ingredients every day, and 27 of these ingredients have not been found safe for children by the government or the cosmetic industry's expert safety panel.

Gaps in health protections leave children exposed to potentially harmful ingredients when their developing tissues and organs are sensitive to chemical damage. Children's skin is 30% thinner than an adults', on average, and can absorb greater amounts of chemicals from the skin surface. They breathe in more air (and air contaminants) relative to their weight than adults, and the blood-brain barrier that helps block chemicals from penetrating brain tissue is not fully formed until a baby reaches 6 months of age.

Top Four Tips:

1.Use fewer products and use them less frequently.
2. Don’t trust the claims. Check ingredients.
3. Buy fragrance-free products.
4. Visit cosmeticsdatabase.com.

Check the Parent's Buying Guide released by EWG. It provides recommendations on choosing safer products for your children.

Take a Breakfast!

Breakfast is a very important meal time for the entire family. Sometimes we skip it, or eat junk food instead of enjoying a nutritious and yummy meal!

Here is a list of great breakfast ingredients for the entire family:
- Natural fruits: jazz it up by making fruit salads, or cutting slices of apples with peanut butter.
- Granola and milk: great source of iron, fibers, calcium and vitamins. A great option is homemade granola bars.
- Fruit and yogurt smoothies: so delicious!
- Eggs: can be prepared in so many different ways. Organic eggs are a great source of protein.
- Whole grain bread: with cream cheese, or homemade jelly....definitely a family favorite.
- Milk, soymilk, yogurt or fruit juices: make your drinks count as sources of good nutrition!

Enjoy the Holidays, and experience pleasurable breakfast time with the family!

Super Powered Antioxidant Açaí

Have you heard about Açaí? It is a very rich fruit coming from Brazil, loaded with vitamins, iron and calcium. Açai can be found in specialty food stores in the US (check WholeFoods, in the frozen food section). It makes a very delicious meal, ideal for breakfast and mid-afternoon snacks.

By the way... Açaí is a Portuguese word, and it uses a letter that we don't have in English. It looks like a c that has a little squiggle underneath, "ç", which indicates that the letter should be pronounced like "s". Açaí also has an accent on the "i", which means that you should emphasize that syllable. The word is actually quite easy to pronounce, “Ah-Sigh-EE”!

Here is a authentic recipe from Latin America!
- 400 grams of açai pulp.
- 1 banana.
- Juice of 1 orange.
- Honey or sugar, if needed. Try it without sugar first!
- Granola

Mix all the ingradients using a blender, except the granola, until the mixture has a smooth and creamy consistency. Serve immediately in bowls while cold. Add granola as shown in the picture. Yummy!

Peel the mango and discard the skin and seed. Mix all ingredients using a blender. Serve immediately while still cold.

H1N1 Vaccine Recalled (But Still Safe!)

800,000 doses of H1N1 vaccine shots for children have been recalled because tests indicate the doses lost some strength.
The shots were made by Sanofi Pasteur for children ages 6 months to 3 years. Doses were distributed across the country last month and most have already been used. According to the Centers for Disease Control and Prevention, the recalled doses are safe and effective, but may have reduced potency.

Occasional Fast-Food Fun

We think a good nutrition is very important for kids and adults. A well balanced diet is a much better option than taking daily supplements. We also know that having some fast food occasionally can be fun and easy on our busy lives. So, we figured that knowing some fast-food nutrition facts for some restaurants could help us make the best decisions.

We found this site with nutrition facts and analysis for the top fast-food restaurants, such as Arby's, Burger King, McDonald's and Starbucks. You will be able to find calories, percentages of fat, fiber, protein, etc. Really not as bad as many think.... but still far for ideal. Checkout nutritiondata.com.

Spanish Paella

It is getting colder and colder outside, and our appetite for carbs and hearty foods is overpowering! Making an effort to keep a healthy diet will definitely pay off after the holidays!

After Thanksgiving, and weeks away from Christmas, we usually feel the need of a break from turkey. So, we thought this would be perfect timing for Spanish Paella. A healthy, hearty and delicious meal for the entire family! There are several versions of Paella, we chose one with seafood and chicken.

Spanish Paella

Serves 4, designed to be made in a 12-inch skillet.

-4 chicken thighs, or breast (about 1 3/4 pounds).
-Coarse salt and freshly ground white pepper.
-2 tablespoons olive oil.
-1 large onion, chopped.
-3 tablespoons chopped garlic.
-1/2 pound shrimp.
-1/2 teaspoon saffron threads.
-1 1/2 cups long-grain rice (use whole rice for a richer nutritional value).
-1 bouillon cube (optional).
-1 ripe tomato, chopped.
-2 cups water.
-12 littleneck clams, scrubbed.
-4 (3-ounce) pieces black sea bass, about 1 inch thick, skin on*.
-1 pound mussels, scrubbed and debearded.
-1 cup frozen peas, rinsed under hot water to defrost.
-1/3 cup chopped fresh parsley.

*You could replace the sea bass with rouget, striped bass, dorade, or even sea scallops.

1. Season the chicken with salt and white pepper.

2. Heat a large (12-inch) skillet over medium-high heat. When the pan’s hot, add the oil and chicken. Brown the chicken well on both sides. Remove the chicken to a plate. If the chicken has released a lot of fat, spoon some out; you want about 3 tablespoons left in the pan.

3. Add the shrimp and sauté, stirring for about 4 minutes. Add the onion and sauté, stirring, until it becomes translucent, about 3 minutes. Add the garlic and saffron and sauté, stirring, for about 1 minute, until fragrant. Add the rice and stir. Crumble in the bouillon cube, if using, add the tomato, and pour in the water. Stir, return the chicken to the skillet, and bring to a simmer.

4. Bury the clams in the rice, hinge down. Reduce the heat to low, cover the pan, and cook for 10 minutes.

5. Meanwhile, season the fish with salt and pepper. Add the mussels to the pan, pushing them hinge down into the rice, then add the fish, skin side up. Cover the pan and cook for 10 minutes. Scatter the peas over the rice, cover again, and cook for 2 minutes. Turn off the heat and let the paella rest for 5 minutes.

6. Garnish with the parsley and serve right from the skillet.

Variation

Lobster rocks in paella. You’ll need 2 lobsters, each about 1 1/2 pounds, prepared for pan-roasting.

Leave all the fat in the skillet after you brown the chicken. Add the lobster pieces and sauté until the shells turn bright red. Set the lobster aside with the chicken and proceed with the recipe. Add the lobster to the rice along with the clams.

Alert: Zhu Zhu Toys May Contain Unsafe Levels of Antimony

The Consumer Product Safety Commission has opened an investigation into the popular Zhu Zhu Pet toy because it may contain higher-than-allowed levels of antimony, a heavy metal which if ingested can make children sick.
On prolonged exposure, antimony — which is used in textiles and plastics to prevent them from catching fire — can cause lung and heart problems, ulcers and diarrhea.

232 Toxic Chemicals Found in Newborns

Laboratory tests commissioned by the Environment Working Group found 9 of 10 randomly selected samples of cord blood tested positive for BPA, and as many as 232 chemicals in the 10 newborns. While the sample is too small to establish a trend, it shows that pregnant women should be concerned about exposure to BPA and other environmental pollutants that can disrupt the endocrine system.

Food Intolerance versus Allergies - Part III

Continuing with our "Food Intolerance versus Allergies" report by Leanne Cooper, from Organic Bubs, here is the final section, part III:

What to do?

While many children grow out of food allergies around the age of 3, if a reaction does occur, remove the food from your baby’s meals for a while. You may consider reintroducing the offending food (in very small amounts) at a later point, with special guidance where the reaction was severe.

If you suspect your child has a food allergy or intolerance, the least invasive methods are elimination diets, kinesiology or hair testing. Other methods include blood tests or skin scratching. Consult your preferred health practitioner.

Initially it can be overwhelming for parents to discover a child is intolerant or allergic to certain foods, but children are often quick to adjust.

Tips for introducing a new allergy-free diet:

  • Read ingredients on labels carefully and look for allergen statements.
  • Take baby steps towards introducing alternatives.
  • Mix old with new until you gradually wean your child.
  • Have the entire family change over to the new food.
  • Use old and familiar packages for the new food.

Logon to www.foodallergy.org for more information and appropriate guidance.

Dirty Chicken

According to a recent analysis from the Consumer Report of fresh, whole broilers bought at stores nationwide, two-thirds harbored salmonella and/or campylobacter, the leading bacterial causes of foodborne disease.

Foster Farms, Perdue, Tyson, 30 nonorganic store brands, nine organic store brands, and nine organic name brands have been analyzed. The findings are a bit alarming. Here is a summary:

  • Campylobacter was in 62 percent of the chickens, salmonella was in 14 percent, and both bacteria were in 9 percent. Only 34 percent of the birds were clear of both pathogens.
  • Store-brand organic chickens had no salmonella at all, but 57 percent of those birds harbored campylobacter.
  • The cleanest name-brand chickens were Perdue's: 56 percent were free of both pathogens. Most contaminated were Tyson and Foster Farms chickens. More than 80 percent tested positive for one or both pathogens.
  • Among all brands and types of broilers tested, 68 percent of the salmonella and 60 percent of the campylobacter organisms we analyzed showed resistance to one or more antibiotics.

Avoid cross contamination at the kitchen by washing your hands and all material that was in contact with raw chicken. Cooking chicken to at least 165 degree is a must!

Food Intolerance versus Allergies - Part I

Leanne Cooper, a nutritionist from Organic Bubs, released a useful guide for parents about food intolerance and allergies. Kids are very sensitive to new ingredients, and understanding the differences between intolerance and allergy may be very helpful.

Below is the first part of the report. Stay tuned for the second and third parts tomorrow and Wednesday!

Food Intolerance versus Allergies - Part I

"Often the term "allergy" & "intolerance" are used interchangeably. Be aware that self-diagnosing can be risky, as not all reactions to food are what they seem. In fact, "allergy" & "intolerance" are different.

A food allergy involves an immune response to a food protein or similar large molecule. A good example is cows' milk protein allergy or peanut allergy.

Definitions of food intolerance are a little less clear. Generally, it is easier to think of it as a non-immune response where the body is unable to deal with a food compound. One of the best known examples is lactose intolerance where a baby may not have sufficient lactose (a digestive enzyme) to digest milk sugars. Food intolerance is much more common than food allergies.

While kids' immune system is still developing reactions to some foods may occur even in infants who do not have a family history. Foods that commonly cause reactions include:
gluten/wheat, dairy products, soy, eggs, fish & shell fish, tree nuts, citrus fruit and tomatoes.

If there is a history of food allergies, eczema or asthma in the family (particularly in a breastfeeding mother) it is recommended that a health professional be consulted. We don’t recommend restricting a child’s diet unless under professional supervision so that nutrients lost from the restricted food is gained elsewhere. Babies are growing at such a phenomenal rate that it is essential they get all the nutrition possible."

Kids Watching Hours of TV at Home-Based Daycare

A recent study published today about home-based day care reported that about 70% of the programs use television daily. The study found that among preschool-aged children, those in home-based day cares watched TV for 2.4 hours per day on average, compared to 24 minutes in larger childcare centers. Toddlers watched an average of 1.6 hours in home care and about 6 minutes in centers. That is certainly not what many parents have signed up for!

The figures come from a telephone survey of licensed child care programs in Michigan, Washington, Florida and Massachusetts.

Quinoa: Nutritious and Delicious

Quinoa is a delicious seed and an excellent alternative for rice. It is very rich in protein, contains all essential amino acids, iron, manganese, magnesium, phosphorus, copper and fiber. It is just as versatile and easy to cook as rice.
Here is a great recipe, tested and absolutely approved by demanding kids!

Baked Quinoa with Spinach and Cheese
Based on recipe by Martha Rose Shulman
Serves 4 to 6 people

- 16oz bag organic baby spinach.
- 2 tablespoons extra virgin olive oil.
- 1 medium onion, chopped.
- 2 garlic cloves.
- 4 cups of cooked quinoa* (1 cup uncooked).
- 2 large organic eggs.
- 3/4 cup gruyere cheese, grated.
- 1 1/2 teaspoons fresh sage, chopped.
- 1/4 cup parmesan cheese, grated.
- Salt and pepper.

Preheat the oven to 400F. Oil a 2 quart gratin or baking dish.
Heat a medium frying pan. Wash the spinach, add to the pan, and wilt in the liquid left on leaves after washing. As soon as the spinach wilts, remove from the heat and let it cool. Squeeze and chop (use the water, rich in vitamins, to cook the quinoa).

Wipe the pan dry, and heat 1 tablespoon of olive oil. Add the onion and garlic for about 5 minutes, until onion is tender. Stir in the spinach and season with salt and pepper. Remove from heat.

Beat the eggs and add 1/2 tablespoon of salt. Stir in the cooked quinoa*, the spinach, the cheese and the sage. Stir and scrape into the gratin or baking dish. Sprinkle the parmesan over the top, add the rest of the olive oil. Place it in the oven and bake it for about 25 minutes.

* To cook quinoa in advance, boil 2 1/2 cups of water with 1/2 tablespoon of salt. Add 1 cup of uncooked quinoa. Reduce heat to low. Cover and simmer for 15-17 minutes. Remove from the cook top. Let it sit undisturbed for 10 minutes to finish cooking.

Roasted Pumpkin Soup... Delish!

Most of us in the US are stuck with many pounds of pumpkins after Halloween festivities. Not a problem! We came up with this great recipe for pumpkin soup. The whole family is going to love it!

Roasted Pumpkin Soup
6 servings

- 1 medium pumpkin (about 4 pounds).
- 1 tablespoon of butter.
- 1 large yellow onion, chopped.
- 4 garlic cloves, chopped.
- 6 cups of chicken stock.
- 3/4 cup of heavy cream.
- 1/4 cup of orange juice.
- Freshly grated nutmeg.
- Salt and freshly ground black pepper.
- 3 tablespoons of chopped parsley.
- 2 tablespoons salted sunflower seeds.

Cut the pumpkin in slices from top to bottom, and place the pieces on an oiled baking sheet. Bake them for about 45 minutes, or until they can be easily skewered.
Remove the seeds with a spoon and discard. Scrape the pulp and reserve. Discard the skin.

Melt butter in a soup pot, add the onion and garlic, stirring occasionally until the onion is soft. Don't let it burn. Add the pumpkin and the stock, and simmer it until the pumpkin falls apart, about 30 minutes. Let it cool.

Puree the soup in batches, using a blender for 2 or 3 minutes, until very smooth. Place it back in the pot, add the orange juice, the cream and the nutmeg. Season it with salt and pepper. Correct the consistency with additional stock or water.

After serving, sprinkle the bowls with chopped parsley and the sunflower seeds.

Pumpkin is a good source of Vitamin E (Alpha Tocopherol), Thiamin, Niacin, Vitamin B6, Folate, Iron, Magnesium and Phosphorus, and a very good source of Dietary Fiber, Vitamin A, Vitamin C, Riboflavin, Potassium, Copper and Manganese.

Lead Hazard

Exposure to lead is very dangerous to kids and adults, resulting in permanent brain damage, heart problems, behavioral and developmental problems.

Unfortunately millions of children are still experiencing lead poisoning from lead paint in older homes and low quality toys, and contaminated soil and drinking water. Kids tend to put objects and toys in their mouths, and not wash their hands as frequently.

Children should be tested for lead levels by pediatricians at ages 1 and 2. Protect your family by checking potential sources of lead at home and day care. Also, ensure they are receiving good nutrition with recommended levels of iron, vitamin C and calcium to help reduce lead absorption.
