Popsicles are a great dessert option. Very refreshing and usually low in calories.
We came across two great recipes, easy-to-make and healthy!
Super Simple Berry Yogurt Popsicles
Servings: 4 popsicles
- 1/3 cup favorite berry preserves
- 1 1/4 cups whole milk yogurt
In a small saucepan, warm the preserves until they are runny. Force the preserves through a fine mesh sieve set over a bowl.
Place the yogurt in a bowl and stir in strained preserves to taste; keep in mind that the mixture should be a little on the sweet side before freezing.
Scrape the mixture into a popsicle mold (or in ice cube trays, adding popsicle sticks when the yogurt is halfway frozen). Freeze overnight or for up to 2 weeks. Run warm water over the mold to help release the pops.
Cantaloupe Creamsicles
Servings: 4 popsicles
- 2 1/2 cups cubed ripe cantaloupe
- 1/4 cup Greek yogurt or light sour cream
- 1 tablespoon light brown sugar, to taste
In a blender, puree the ingredients until smooth. Pour into popsicle molds and freeze until solid. Run warm tap water over the outside of the mold to release.
