Quinoa Oatmeal Cookies

I love quinoa...it is one of the richest source of proteins and minerals. Finding this recipe was so awesome. It makes great cookies for the lunchbox. You must give it a try!

Quinoa and Oatmeal Cookies 
  • 1/2 cup butter
  • 1/2 cup apple sauce
  • 1 cup brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 tablespoons honey
  • 1 cup all purpose flour
  • 1 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup quinoa flour/flakes
  • 1/2 cup toasted pecans or walnuts
  • 1 cup of raisins
Preheat the oven 350 degrees F. Cream the butter with the sugar. Add the eggs, vanilla, honey and apple sauce. Mix until incorporated.
In a separate box, mix the whole wheat flour, flour, salt, baking soda and cinnamon. Stir dry and wet ingredients. Drop by rounded tablespoons onto cookie sheet lined with parchment paper. Bake for 15 to 20 minute. Let cook for 5 minutes on baking sheet.

If you can't find quinoa flour, substitute 1 cup cooked quinoa, and add an extra 1/4 cup all purpose flour.
