Mighty Sandwich

Sandwiches are generally delicious, very practical and can be quite nutritious. We selected a few options that fit all 3 categories. What's more, they are easy to make too!  

Bread:

For bread, our suggestion is to follow your imagination! There is an incredible variety of whole grain bread out there. Let the kids pick their favorites!



 Filling:
Servings: 1 to 2 sandwiches

Goat Cheese and Veggies
- 1 oz goat cheese
- Organic spinach leaves to taste
- 1 oz. roasted organic red bell pepper
- 1 teaspoon dijon mustard
- Salt, ground black pepper
- Extra virgin olive oil to taste

Spread the dijon mustard on both sides of the bread, cover one side with goat cheese and slices of roasted bell pepper. Stir the spinach leaves with salt, black pepper and olive oil. Cover it with the other half of the bread.


Turkey Burger and Mozzarella
- 1 turkey burger
- 1 oz. fresh mozzarella
- 1 tablespoon Dijon mustard
- Organic mixed greens to taste
- Dry oregano
- Onion, sliced
- 1 tablespoon of olive oil
- Salt, ground black pepper

Grill the burger with the slices of onion and the olive oil, add salt and black pepper to taste. Cover the burger with the mozzarella until it melts, and the burger is cooked. Spread the mustard on both sides of the bread. Top it with the burger and the mixed greens. Sprinkle oregano.


Ricotta, Carrots and Parsley
- 1oz fresh ricotta
- 1 organic carrot, shredded
- 1 tablespoon fresh organic parsley, diced
- 1 tablespoon extra virgin olive oil
- Salt and ground black pepper
- 1 garlic clove, diced

In a saucepan, fry the garlic with the olive oil. Add the carrots. After a couple of minutes add the ricotta, parsley, salt and black pepper. Spread the mix on both sides of the bread.


Chicken Breast, Tomato, Cucumber and Mozzarella
- 1 Chicken Breast, cooked and sliced
- 1 organic roma tomato, sliced
- Red onion to taste, sliced
- 2-4 thin slices of cucumber
- 1oz fresh mozzarella
- Fresh basil
- 1 tablespoon of cream cheese
- Salt and ground black pepper

Warm up the chicken breast with salt and pepper, top it with the cheese until it melts. Spread cream cheese on both sides of the bread. Place the chicken on one side of the bread. Top it with slices of tomato, cucumber, onion and fresh basil.

If you have a grill, warm up both sides of the bread for some "toasty" flavor.
