Butternut Squash Cookies

We love transforming kids' favorites into healthy foods! One of our friends created this amazing cookie recipe. It is very easy to make and tastes incredibly good. Give it a try, your family will love it!

Butternut Squash (or Pumpkin) Cookies
Servings: 30-40 cookies


Combine:
  • 1 1/2 cups pureed cooked butternut squash (frozen squash, or roast it yourself). You can use pumpkin as well. 
  • 1/3 cup packed brown sugar
  • 1/2 cup olive oil
  • 1 large egg
  • 1 tablespoon.vanilla

Combine
  • 2 cups (or a bit less) whole wheat flour (pastry flour is best)
  • 1 tablespoon baking powder
  • 1/2 tablespoon baking soda
  • 1/2 tablespoon salt
  • 1/2 cup toasted chopped walnuts, almonds, peanuts or pecans
  • 1/2 cup chocolate chips
  • 1/2 cup chopped raisins or dried cranberries
  • 1/2 cup sunflower seeds or chopped pumpking seeds (optional)

Mix together, bake at 375 for 10-15 min.

  2. I used pureed pumpkin and made them with raisins and without the chocolate chips, nuts, and seeds. I also used only 1/4 cup of olive oil and added 1/4 cup of applesauce (maybe just a little more) and I added a 1/2 teaspoon of cinnamon. They turned out great! Yum!
