Butternut Squash (or Pumpkin) Cookies
Servings: 30-40 cookies
Combine:
- 1 1/2 cups pureed cooked butternut squash (frozen squash, or roast it yourself). You can use pumpkin as well.
- 1/3 cup packed brown sugar
- 1/2 cup olive oil
- 1 large egg
- 1 tablespoon.vanilla
Combine
- 2 cups (or a bit less) whole wheat flour (pastry flour is best)
- 1 tablespoon baking powder
- 1/2 tablespoon baking soda
- 1/2 tablespoon salt
- 1/2 cup toasted chopped walnuts, almonds, peanuts or pecans
- 1/2 cup chocolate chips
- 1/2 cup chopped raisins or dried cranberries
- 1/2 cup sunflower seeds or chopped pumpking seeds (optional)
Mix together, bake at 375 for 10-15 min.

ReplyDeleteI used pureed pumpkin and made them with raisins and without the chocolate chips, nuts, and seeds. I also used only 1/4 cup of olive oil and added 1/4 cup of applesauce (maybe just a little more) and I added a 1/2 teaspoon of cinnamon. They turned out great! Yum!
